Back in January of this year, on the anniversary of Elvis’ birthday, I blogged about a delicious Mexican-Style Meatloaf and a luscious side of mashed potatoes. I wanted to re-visit that recipe and make it a little differently. The ingredients are still the same, but the look is something I’ve wanted to achieve ever since I saw Martha Stewart make her surprise Meatloaf Cake.
I’ve mentioned that I’m now learning to cook for “two” so an entire cake just seemed a little too much for Bob and me. So I made Meatloaf Cuppy Cakes. They were perfect. I made a dozen and we had six for dinner and saved the other six for a later meal.
I won’t bore you with re-posting the recipe, just go to this link and read it. I just wanted to share my special little Meatloaf Cupcakes and tell you that I’m learning to cook in smaller amounts and still be able to make it interesting.

ReplyDeleteWe're starting to cook smaller quantities, too - our son isn't gone yet, but he is over at friends or wherever, so there are more dinners at home alone. Sigh.

ReplyDeleteThese look great. I used to make turkey meatloaf in muffin tins all the time and eat them cold on the way to work for breakfast! Strange I know but it was so good! ;-)
