Oranges and Sweet Potato in Red Chile Sauce
Camotes en Chile Colorado con Naranja

O Foods for Ovarian Cancer Awareness Month
September is Ovarian Cancer Awareness Month. In honor of Gina DePalma, author of Dolce Italiano: Desserts from the Babbo Kitchen and Executive Pastry Chef of Babbo Ristorante in NYC, who was recently diagnosed with ovarian cancer, Sara of Ms Adventures in Italy, Jenn of The Leftover Queen, and Michelle of Bleeding Espresso are asking you to donate to the:
Ovarian Cancer Research Fund

Recipe for:
Oranges and Sweet Potato in Red Chile Sauce

1 recipe red chile puree
½ teaspoon cinnamon
1/8 teaspoon ground cloves
Black pepper to taste
½ cup water
1 tablespoon chopped orange zest
½ cup orange juice
2 tablespoons honey
3 pounds camotes (sweet potatoes)
Chopped cilantro and orange slices for garnish

Combine red chile, cinnamon, cloves, pepper and water. Heat thoroughly. Slice sweet potatoes into ¼ inch thick slices. Arrange on buttered baking dish. Combine orange zest, orange juice, and honey. Add red chile to orange juice mixture to desired piquancy and taste. Add salt if necessary. Spoon over sweet potato slices. Cover with foil.Bake in a 350° oven for 45 minutes or until slices are tender. Uncover the baking dish and bake an additional 10 minutes to thicken sauce if needed.Arrange on heated platter and garnish with cilantro sprigs and orange slices. Serves 6 to 8 people.

Red Chile Puree

9- (about 3 ounces) dried New Mexico or California red chiles, hot or mild or a combination of both
2- cups water, or more, to cover chiles completely with water in pan
1- small onion, chopped
2- cloves garlic, chopped

Toast chiles on a large baking pan for approximately 4 minutes. Let cool slightly and then remove seeds and stems.
IMPORTANT! Wear rubber gloves when handling chiles. If you accidentally rub your eyes when handling chiles without gloves, it will really sting.

In a 4-quart pan, combine chiles, water, onion, and garlic. Cover and bring to a boil over high heat. Reduce heat and simmer (covered) until chiles are soft (about 30 minutes). Remove from heat and cool slightly. In blender, whirl chile mixture till smooth. Run through sieve (strainer) to discard residue and any unprocessed chile skins. Purée can be refrigerated (covered) up to 1 week. Makes 2 cups.

Ovarian Cancer
· Ovarian cancer is the leading cause of death from gynecologic cancers in the United States and is the fifth leading cause of cancer death among U.S. women; a woman’s lifetime risk of ovarian cancer is 1 in 67.

· The American Cancer Society estimates that 21,650 women will be diagnosed with ovarian cancer in the U.S. in 2008 and about 15,520 women will die from the disease.

· The symptoms of ovarian cancer are often vague and subtle, making it difficult to diagnose. There is no effective screening test for ovarian cancer but there are tests which can detect ovarian cancer when patients are at high risk or have early symptoms.

· In spite of this patients are usually diagnosed in advanced stages and only 45% survive longer than five years. Only 19% of cases are caught before the cancer has spread beyond the ovary to the pelvic region.

· When ovarian cancer is detected and treated early on, the five-year survival rate is greater than 92%.

Foodycat and Reeni, thank you for the comments. Yes, it is a most excellent side dish and alternative with a Thanksgiving meal. My husband is a cancer survivor (prostate cancer), so we try and bring attention to the need for research anywhere we can. Thank you, luvs, for stopping by.

This does look like a great side dish Teresa... and it's full of vitamins too :) We are approaching sweet potato season here, so I'm very excited.

I'm glad to hear you are doing well with your fibromyalgia. I know it's difficult, but you have a great outlook on life and treating it, and I think that's amazing.

Oh and I didn't make you feel guilty... whew, well that's a relief :)

A very unusual dish, for an excellent cause.

great cause...and a unique recipe. One that I have never heard of before. I saw that Adam mentioned you having fibro in his comment. How long have you had it?'s been about 5 years now.
I will have to get up the courage to try chiles and sweet potatoes together!
